Description
Speck dell Alpi originates from the South Tyrolean area of North East Italy in the snow capped mountains of the Dolomites. It is very similar to Proscuitto Crudo however stands on its own to be regarded as an exclusive cured ham and delicacy of the area. It is said to be regarded as a mountain taste due to the long curing process giving a flavour that is second to none, smoked with Beechwood.
Speck is taken from pork legs flavoured with sea salt and natural spices before the curing process. Some would say that an Italian meat platter is not complete if you do not have some of this incredible flavoursome meat included.
Although very similar to Proscuitto it is redder in colour and firmer in texture.
