Description
Salami Felino originates from a small town in the Emilia-Romagna region, Felino, in the province of Parma.
The meat used to create this delight is from the adult pig and called ‘trito de banco’ which means minced meat from under the shoulder. It is aged for at least 30 days producing a ruby red colour alongside white bits of fat within the log. The unique soft flavour is a combination of the Italian pork and addition of salt, pepper, natural flavours and white or sherry wine which all help to produce the intense, characteristic aroma and yet delicate taste.
It has been regarded by many as the ‘King of Salami’.
