Linked Chorizo Sausage originates from Spain. It is a spicy, cured, smoked pork sausage.
These are perfect for cooking whole in a stew or slicing and having in salads.
Chorizo is an ancient way of preserving pork. With the discovery of Pimenton in the 16th century the sausage developed more flavour and luxury. It subsequently became known as the Kings sausage. The story goes. King Charles IV was hunting when a chorizo-maker offered him a taste of his produce. The king loved the flavour so much, that he instantly appointed the man as the royal chorizo maker. Consequently, the humble chorizo became a status symbol for centuries right up to the mass production and affordability of pimenton.
Spanish chorizo is made from coarsely chopped pork and pork fat, seasoned with garlic, pimentón – smoked paprika – and salt. It is generally classed as either picante (spicy) or dulce (sweet), depending upon the type of pimentón used. Hundreds of regional varieties of Spanish chorizo, both smoked and unsmoked, may contain herbs, and other ingredients

A more crumbly textured than shop bought Chorizo and not quite as spicy. Superb for paellas etc.
