Description
Coppa, also known as Capocollo or Capicola is produced in many areas throughout Italy and Southern Switzerland. It has been produced since the 1800s and has always been regarded as ‘noble’ salami in years gone by.
It is meat taken from the muscle in the upper portion of the pig’s neck extending into part of the shoulder. As the shoulder is used a lot it is packed full of fat and consequently incredible flavour too. The meat is ideal for either roasting or charcuterie. For this purpose the meat is in fact salted and massaged to evenly distribute the salt, then dry-curated for several months. Coppa is the equivalent to the beef product, bresaola.
It is the perfect accompaniment to any antipasti selection of meats.
