    Smoked this for 18 hrs at 225f. To be fair I had to wrap it at 16 hrs to move it along so prepare for 20 plus hrs at that temp. I removed the fat off the top and smoked that at the same time. After 16 hrs it was perfect. Amazing flavour and crunch. The pork itself fell apart instantly and there was so much meat. The bone was not that big. So tender and delicious and well worth the money. If you aren’t just serving pulled pork this will stretch well past the suggested 10- 12 people. Just pure quality.
