Description
A beautiful tasty and tender piece of meat. Taken from the chuck roll in the shoulder of the fore quarter of the animal, this is just the centre cut eye muscle only.
Incredibly versatile with so many available cooking methods i.e. slow braising, roasting or thinly portioned for grilling as a steak.
The best however may in fact be barbecuing. This muscle lends itself perfectly to being generously smothered in a rub and allowed to cook or smoke slowly on the BBQ.
