Wow, these Beef Shin Cushions pack some intense flavour! Amazingly soft, gelatinous beef which will just naturally fall to pieces if braised long and slow. Taken from just above the knee on the animal. These really are beautiful daubes of lip licking tastiness.
Yorkshire beef is some of the finest in the whole of the UK. Selected from herds across this large historic county. Here at Waterford Farm, we farm our own special Grass-fed, slow-grown cattle. We farm and age native and continental breeds. As a result, we can meet the various demands of our chefs. Secondly, we have a fantastic network of farmers who all supply us with incredible grass-fed beef.
Pack weight to range between 430g-470g
Our Recommended Cooking Instructions:
- Firstly, bring your Beef Shin Cushions to room temperature
- Meanwhile, prepare a sofrito
- In a heavy-based casserole dish start by browning the shin.
- Once browned add the sofrito and a true food beef gravy. Put on a lid
- Cook slowly in an oven at 160c for 2 hours.
- Most importantly, enjoy.

This shin beef was fabulous.I used it to make a pie with puff pastry crust.
After a long slow cook the beef was so tender it melted in your mouth!
